Flavour Category
chocolate & caramel chocolate & caramel
High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Chocolate & Caramel. Brought out by the roasting process – caramelisation happens towards the end of the roast. Generally the darker the roast, the more dominant the chocolate and caramel flavours are.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.
Quality Score
85.0
Coffee scoring over 80 on Speciality Coffee Association scale is considered High Quality, Speciality Coffee.
Best Brewed As
espresso
This coffee is best brewed as an espresso (coffee shop type machine or a bean to cup). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
filter
This coffee is best brewed as a filter (cafetiere, pour over, aeropress, drip, etc.). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
Processing Method
This coffee was processed using the washed method. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter and honey processed are somewhere in between.

More about this coffee

It can take several hours for producers to carry their coffee cherries to the Coffee Washing Station (CWS) this is to facilitate ‘Cafecultuerurs de Gishoma’ located in Cyangugu on the southern shore of Lake Kivu, right on the border crossing with DRC Congo. The original name of the district was called Gashonga, so that name has stuck. The area is where the first coffee trees were planted in Rwanda by Belgian white colonial farmers.

Cocagi

Rwanda

Co-operative des Cafecultuerurs de Gishoma (COCAGI) is located in the district of Gashonga, Cyangugu Province in western Rwanda. This co-operative sits on the southern shore of Lake Kivu which borders with the neighbouring Democratic Republic of Congo.

Like most of Rwanda, they are blessed with the perfect climate to produce speciality coffee with high altitudes and rich volcanic soils. They produce 100% bourbon cultivar which has a distinctive cup profile of sweet rounded tangerine acidity, morello cherry notes in the aftertaste in this medium-bodied cup.

Our relationship with COCAGI began in 2006, not just as a buyer, but the start of a commitment to provide long-term support, including pre-finance to the members of the co-operative. Significant progress has been made at the co-operative level with the installation of additional de-pulping machines at coffee washing station that has increased capacity and income. The farmers at COCAGI are motivated and focused towards achieving sustainable livelihoods for their community.
