Organic Peru

Our Union Promise: You can enjoy your coffee knowing it is always sourced direct from farmers via Union Direct Trade. Always high quality speciality coffee, carefully roasted fresh to order.

Full bodied and syrupy

The smooth body of this coffee works great as an espresso or with milk, the lightness means it works just as well as filter.
Flavour Category
chocolate & caramel chocolate & caramel
High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Chocolate & Caramel. Brought out by the roasting process – caramelisation happens towards the end of the roast. Generally the darker the roast, the more dominant the chocolate and caramel flavours are.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.
Quality Score
84.5
Coffee scoring over 80 on Speciality Coffee Association scale is considered High Quality, Speciality Coffee.
Best Brewed As
espresso
This coffee is best brewed as an espresso (coffee shop type machine or a bean to cup). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
filter
This coffee is best brewed as a filter (cafetiere, pour over, aeropress, drip, etc.). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
Processing Method
This coffee was processed using the washed method. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter and honey processed are somewhere in between.

More about this coffee

Very sweet and balanced coffee. The highlight of this espresso is a really thick and syrupy body. Expect flavour notes of crisp red apple, rapsberry jam, sticky toffee and a hint of marzipan. If you like your coffee with milk, see how these flavours turn to vanilla, red berry yoghurt, toast and cocoa. For the filter drinkers, this is a deliciously sweet and crisp coffee. Unusually high body for a filter coffee, notice how it sticks to the wall of your cup, just like a good wine on a glass. The lot we have selected is a special preparation that represents about 10% of the summit of the crop. It is harvested from the highest elevations of Balcones, La Lima and Cordillera. Because of the high elevation, this Union Direct Trade and Organic coffee ripens late in the season and is one of the last to be harvested.

Chirinos

Peru

Chirinos is a co-operative of smallholder coffee farmers in Amazonas, North Peru. In 1968, 36 smallholder farmers joined together to form this co-operative and today they boast over 807 members, 30% women, from several communities in Cajamarca region. The average coffee producer farms an area less than 5 hectares, so being part of a co-operative enables them to sell their coffee.

This co-operative produces coffee under completely organic conditions and has been part of innovation in this area; namely a highly organised thoroughly researched organic composting system. This is comprised of nitrogen-rich manure produced from guinea pigs, mixed with composted coffee cherry, cow manure and honey water from coffee processing. This is mixed with EM (Extra-ordinary Microorganism) to increase rate of decomposition. This organic compost facility is the powerhouse for successful organic crop production and is critical to ensure that farmers produce sustainable yields and continue to maintain soil in peak condition.

Chirinos is an excellent example of how successful co-operatives can change the lives of coffee farmers.
