A sweet and fruity espresso

An irresistible, juicy coffee bursting with sweet notes of tropical fruits, cherry and an indulgent, rich, truffle chocolate finish. N.B We roast this coffee in limited quantities once a week, so your order may take longer to reach you than normal (see below for more).
Flavour Category
fruit fruit
High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Fruit. Many coffees have fruity notes, not surprising considering that coffee beans are seeds of a fruit. Naturally processed coffees are often fruity as the method enables more of the sugars in the fruit are absorbed in the beans.
Quality Score
87.0
Coffee scoring over 80 on Speciality Coffee Association scale is considered High Quality, Speciality Coffee.
Best Brewed As
espresso
This coffee is best brewed as an espresso (coffee shop type machine or a bean to cup). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
filter
This coffee is best brewed as a filter (cafetiere, pour over, aeropress, drip, etc.). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
Processing Method
This coffee was processed using anaerobic fermentation. A technique where coffees are fermented without any oxygen and by keeping the coffee cherries enclosed to create further complexity in the flavour profile.

More about this coffee

We roast this coffee in limited quantities once a week, so your order may take longer to reach you than normal.

Orders placed before 4pm on Tuesday will be roasted and despatched on Thursday.

Any orders received after this time will be held until the following week. If you order other items, your order will be held and everything will be roasted and despatched on the same day.

This is an incredibly special lot that was produced at the Los Pirineos farm, situated on the Tepeca volcano in Usulatan, El Salvador by a legendary coffee grower, the late Gilberto Baraona. Known for experimenting and having access to different cultivars, Gilberto grew this coffee as an orange bourbon using anaerobic fermentation.

This process describes a technique where coffees are fermented without any oxygen and by keeping the coffee cherries enclosed to create further complexity in the flavour profile.

To honour, Gilberto and his admirable exotic growing methods, we have named this coffee after him.

Los Pirineos

El Salvador

Los Pirineos is a 150 hectare farm located at 1480 meters above sea level with a view on 7 volcanos. A volcanic mountain range in the Department of Usulutan, the area is perfect for growing coffee, due to the prolonged dry periods. The farm enjoys ideal climatic conditions, such as altitude, temperature, rainfall, and great volcanic soil.

Los Pirineos was named due its similarity to the Pyrenees Mountains in Europe, which separate France and Spain. The farm Los Pirineos also separates two towns, Berlin and Santiago de Maria.

A large part of the farm is being renovated and planted with exotic varieties such as Geisha, Java, Rume Sudan, SL28, and five different varieties brought from Ethiopia. A unique feature of the farm is it’s coffee garden, which features some 80 different varieties. Including varieties that are not commercially grown such as polysperma, whose cherries have up to ten seed .

The farm has been in the hands of the family for 100 years and has always been cultivated under traditional shade. The farm has more than a thousand raised beds. Here coffee is perfectly sundried. Washed, honeys’ and anaerobic fermentation, los Pirineos is a farm that can handle all types of coffee processing methods, with great success.

A wide range of Flora and Fauna is found within the farm, where endangered species such as deer seek refuge. Los Pirineos employs more than 30 people on a permanent basis.

In June 2020, the news reached us Gilberto Baraona owner of Los Pirineos passed away. Gilberto is a 17 times Cup of Excellence winner and his passing is a great loss for the coffee industry.
