A complex coffee that changes with every sip

Flavour Category
fruit fruit
High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Fruit. Many coffees have fruity notes, not surprising considering that coffee beans are seeds of a fruit. Naturally processed coffees are often fruity as the method enables more of the sugars in the fruit are absorbed in the beans.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.
Quality Score
87.5
Coffee scoring over 80 on Speciality Coffee Association scale is considered High Quality, Speciality Coffee.
Best Brewed As
filter
This coffee is best brewed as a filter (cafetiere, pour over, aeropress, drip, etc.). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
Processing Method
This coffee was processed using the natural method. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter and honey processed are somewhere in between.

More about this coffee

We roast this coffee in limited quantities once a week, so your order may take longer to reach you than normal.

Orders placed before 4pm on Tuesday will be roasted and despatched on Thursday.

Any orders received after this time will be held until the following week. If you order other items, your order will be held and everything will be roasted and despatched on the same day.

This coffee offers a complex and unique flavour profile – typical of Pacamara coffees. It has a combination of tropical fruits and floral notes, accompanied by the sweetness of milk chocolate, giving you a creamy mouthfeel cup.

Produced by a family-run farm, El Topacio, located in Juayua, El Salvador, this coffee benefits from the excellent climate and conditions of the area from high altitudes to soil quality. It’s no wonder that the area frequently dominates Cup of Excellence competitions for high cup quality! The farm is run by Leopoldo, who was one of El Salvador’s early adaptors of natural and honey processed coffees after working closely with Graciano Cruz (the coffee processing expert in Panama).

El Topacio

El Salvador

'El Topacio' is named after the gemstone topaz. This is to stay in line with the name of its sister farm 'El Diamante'.

More than a century ago, two coffee-producer families were united by their offspring´s marriage: Apolinario and Adelaida de Magaña’s son, Francisco Magaña Herrera; and José Antonio and Gordiana de Cáceres’s daughter, Evangelina Cáceres Magaña. Both family heads were very active in the production, processing and trading off coffee, and both had their lands in the beautiful mountains of Juayúa, Sonsonate in the Ilamatepec Mountain range. The family has a long history in the town, constructing the towns church.

El Topacio is located near Juayua, a traditional coffee growing town, in El Salvador. Because of its famous gastronomic festival held each weekend the town attracts many tourists. Juayua or comes from Xuayuat, a indigenous term for the orchids also known as San Sebastian, Juayua (Xuayuat) means place of orchids or purple flowers. In 1940, professor Larde and Larin made the observation that the coffee shade trees were dressed and armed with these beautiful flowers.

Today the farm belongs to the fourth generation Maria Elena, but is run by Leopoldo Muyshondt (5th generation).
