Flavour Category
citrus & floral citrus & floral
High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Citrus & Floral. Coffees in this category have zesty citrus flavours and the scent of flowers including honeysuckle, jasmin, dandelion and nettles. Often prominent in washed coffees, the traditional processing method in Ethiopia.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.
Quality Score
92
Coffee scoring over 80 on Speciality Coffee Association scale is considered High Quality, Speciality Coffee.
Best Brewed As
cafetiere
This coffee is best brewed as a cafetiere (French press). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
filter
This coffee is best brewed as a filter (cafetiere, pour over, aeropress, drip, etc.). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
Processing Method
This coffee was processed using anaerobic fermentation. A technique where coffees are fermented without any oxygen and by keeping the coffee cherries enclosed to create further complexity in the flavour profile.

Nestor Lasso

El Diviso

Nestor Lasso’s El Diviso farm covers 18 hectares and is filled with lush forest that is home to 80,000 coffee trees, growing at altitudes between 1700-1850 metres. The farm carries a great diversity of varietals, currently home to Caturra, Colombia, Castillo, Tabi, Pink Bourbon, Red Bourbon, Yellow Bourbon, Bourbon Ají, Caturra Chiroso, Geisha, Sidra, Java, Pacamara. Nestor uses fully washed, semi washed and natural methods to process his coffee - to dry coffee Nestor uses parabolic dryers, raised African beds and some mechanical drying methods.

Nestor says, “We are the third generation that has been growing coffee. Our grandfather, José Uribe, was the founder of the farm El Diviso. With the work of all the family and constant saving we were able to build the infrastructure to process differentiated coffees; searching for better quality, both in coffee and our lives. After a long trial and error period we managed to standardise different processes, getting a better income in order to plant new varieties that allowed us to have better quality. One of our dreams is to produce speciality coffee that reaches all the world.”
