Dense complex and tropical

A deliciously complex example of natural processing, this lot from Graciano Cruz’s Los Lajones has a dense, sticky body with vanilla sweetness, tropical mango and a long, creamy finish.

High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Fruit. Many coffees have fruity notes, not surprising considering that coffee beans are seeds of a fruit. Naturally processed coffees are often fruity as the method enables more of the sugars in the fruit are absorbed in the beans.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

More about this microlot

Graciano Cruz is a speciality coffee farmer, father of three sons, beach lover and most importantly, an advocate of high-quality coffee processed with the minimum amount of natural resources. One of the first farmers in central America to start advocating for zero water use by using the natural process.

Thanks to unique geological characteristics in its location between two lava flows, the first of Graciano’s two coffee farms, Los Lajones, has a unique and specific microclimate. The farm has a stunning biodiversity, home to many species of birds, trees, butterflies and fungi. All coffee production has moved to two processing methods; natural or honey process, resulting in zero water used to process the coffee and reducing waste.
