High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Fruit. Many coffees have fruity notes, not surprising considering that coffee beans are seeds of a fruit. Naturally processed coffees are often fruity as the method enables more of the sugars in the fruit are absorbed in the beans.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

Processing Method
This coffee was processed using the natural method. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter and honey processed are somewhere in between.

Roast Date

We will next be roasting this coffee on Wednesday 1st April for all orders placed by midnight Tuesday 31st March. Orders will be despatched together with any other coffees or items in your order.


High in the hills of Manzanares, Colombia, you will find Gananciales, the farm of Yeraldine Castro. She lives here with her husband and two children and brings a deep understanding of agriculture that began in avocado farming before moving into coffee four years ago.

At 1,850 masl, Yeraldine grows Geisha among other varieties and has worked closely with the Reforest project to refine her processing methods and strengthen quality. This lot was produced using a carefully managed natural process, cherries are washed with salt water before small batch anaerobic fermentation and slow drying to bring clarity and complexity to the cup.

The result is an elegant, complex and floral cup with notes of jasmine, hawthorn and lychee. We purchased this exceptional lot after an extensive week of cupping alongside many other coffees, where its unique flavour profile achieved the highest score - a testament to Yeraldine’s dedication to quality and craftsmanship.
