Sweet and spiced with notes of baked apple and cinnamon crumble – a comforting Costa Rica coffee, grown and processed with care by the Cordero Segura family and Cordillera de Fuego mill.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

Processing Method
This coffee was processed using anaerobic fermentation. A technique where coffees are fermented without any oxygen and by keeping the coffee cherries enclosed to create further complexity in the flavour profile.

More about this microlot

Returning for its fourth year, Cordillera de Fuego is the star of our Christmas microlot lineup - a coffee that captures the warmth and comfort of the festive season.

Grown by the Cordero Segura family on their Tarrazú farm at 1,650 masl, this lot is dried and processed at the Cordillera de Fuego micro mill in Costa Rica’s West Valley. Owned by Luis Eduardo Campos and José Francisco Fernández, the mill is known for pioneering anaerobic processing methods that create rich, sweet and complex coffees.

In the cup, expect notes of baked apple and cinnamon crumble - flavours so comforting they feel like Christmas in a cup. It shines as a filter brew and is equally delightful in milk-based drinks, making it the perfect companion for slow, cosy moments this Christmas.
