This very special microlot creates a sumptuously sweet & spicy cup and is the perfect complement to any Christmas moment. Cordillera de Fuego is filled with the moreish notes of cinnamon bun, gingerbread and brown sugar, particularly delicious when brewed as a filter.
Flavour Category

High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Nuts & Spice which typically shows the aroma of sweet spices such as cloves, cinnamon and allspice. Flavours of toasted almonds and macadamia. And is often typical of Brazil coffees and the Bourbon variety.
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

Coffee scoring over 80 on Speciality Coffee Association scale is considered High Quality, Speciality Coffee.
Best Brewed As
This coffee is best brewed as a filter (cafetiere, pour over, aeropress, drip, etc.). All our coffees can be brewed using any method, but this is our recommendation for a method which suits the coffee particularly well.
Processing Method
This coffee was processed using anaerobic fermentation. A technique where coffees are fermented without any oxygen and by keeping the coffee cherries enclosed to create further complexity in the flavour profile.

More about this microlot

The Cordillera de Fuego micromill is located in Costa Rica’s West Valley, however they work with producers from all over the country. The mill is owned by Luis Eduardo Campos and José Francisco Fernández whose aim, with over 30 years of experience, is to help their neighbouring farms access speciality coffee markets.

Processed and dried at Cordillera de Fuego, this lot was grown by the Cordero Segura family on their farm in Tarrazu, which sits at an altitude of 1650 m.a.s.l.
