Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

This coffee was processed using the washed method. Post-harvest processing influences the taste profile. Washed coffees are brighter, naturally processed are sweeter and honey processed are somewhere in between.

Gaitana is a washed coffee from the Asprotimana Association in Colombia - named in honour of the female warrior who once led the Yalcón people in resistance during the 16th century. Today, her legacy continues through the women-led subgroup within Asprotimana, who produced this special lot.

The programme empowers women across the coffee value chain, supporting farm ownership, quality training and access to specialty markets. Each woman plays an active role in cultivation, processing and decision-making, helping to strengthen livelihoods and build long-term sustainability for their families and community.

Gaitana is bright, juicy and beautifully balanced. Expect notes of red berries, honey and delicate florals with a clean, syrupy mouthfeel that is smooth and moreish. A standout choice for filter brewing and a true expression of the skill, care and resilience of the women who grow it.
