Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

Miguel Pérez has spent decades building Finca Don Miguel into a family enterprise that spans three generations. Situated in the mountains above Gracias, Honduras, at 1,300 to 1,750 masl - the farm thrives in a climate that's nearly ideal year-round, surrounded by pine forest, avocado, citrus and shade trees.

This microlot is handpicked and processed with precision and care using the washed method. Alongside running the farm with his wife and their three children, Miguel continues to push for quality - driven by deep knowledge of the land and a commitment that shapes every decision.

The result is layered with sweetness. Notes of plum jam and cola, smooth and syrupy - a texture that speaks to Miguel's precision and care. A coffee shaped by family ambition, generational knowledge and the kind of meticulous attention that comes from working land you love.
