Irish Coffee (With a Twist)

Irish Coffee was created as a winter warmer to perk up passengers disembarking from a Pan Am flight to Shannon in the 1940s. It does a great job of heating you up on a cold winter’s day.

The twist with this recipe is that it’s served cold. The temperature and cream are key. It's akin to the feeling of melted chocolate, all rich and unctuous.

How to make it

  1. 1. Brew your coffee and leave to cool in the fridge for 2 hours
  2. 2. Add 2 parts sugar to 1 part hot water to make a simple syrup
  3. 3. Fill your clip-top bottle with cream (add a little whisky if you like an extra kick)
  4. 4. Seal the bottle and shake vigorously until you hear the cream thicken and slow down (don’t overshake)
  5. 5. Pour the whiskey, 20ml of sugar syrup and the coffee into your glass
  6. 6. Give it a good stir
  7. 7. Now the fancy bit. Place the spoon face down over the surface of the liquid and pour the cream over the back of it, slowly. You want the cream to settle on the surface of the liquid.

What you'll need

  • 150ml of coffee
  • 10g of muscavado sugar (any sugar will do though. You could even use honey)
  • 25ml of good quality single malt whisky (preferably onewith a sherry cask finish such as Dalmore 15 Year Old)
  • Double Cream
  • Clip-top glass bottle
  • Tea-spoon (or a fancy pants bar spoon if you want to show off)
  • 8oz wine glass

  • Any coffee will work with this recipe. We would recommend any of our House Blends or some of our Single Origins.
