High quality coffee has wide ranging, naturally occurring taste notes. The dominant flavour profile in this coffee is Chocolate & Caramel. Brought out by the roasting process – caramelisation happens towards the end of the roast. Generally the darker the roast, the more dominant the chocolate and caramel flavours are.
Roast
This coffee is a light roast. Roast level influences the flavour and body of coffee. Darker roasts are fuller bodied, lighter roasts brighter. The beans are light brown in colour (unsurprisingly), it will retain more of the natural flavour of the coffee. This can result in a higher acidity and may often show more fruit and floral notes. This roast style means the quality of the coffee shines through the best.

More about this microlot

Located in the north of Oaxaca state, Mexico, the Sierra Mazateca takes its name from the indigenous population of Mazatecos, who call the area home. The Mazateca community maintains its traditional cultivation of Typica and Bourbon coffee varieties. Grown with minimal intervention, the trees can reach up to three meters in height, and are often intercropped with a wide variety of corn and shade trees.

This lot is a blend of coffees from 55 smallholder producers, with each producer processing their own coffee. Freshly picked cherries are manually de-pulped and undergo dry fermentation for up to seventy-two hours, due to the cool climate and cold nights, before being washed. This extended fermentation enhances the natural flavours and complexity of the final cup.
